Shredded Pork Tacos

Tonight we ate shredded pork tacos.  We had them on on corn tortillas, with cabbage, pico de gallo, and cheese.  I served it with rice and beans. It was point friendly towards Weight Watchers.  (A fact that I dont like to share, but some members of our family are on Weight Watchers.)  It was a hit with the kids.

Home made Pizza

Tonight the kids and I made pizza for dinner.  The crust was a bit too crispy but the toppings were good.  We used pineapples, sausage, and olives.  It was time consuming but easy. Wow my kitchen was a mess after. Flour was everywhere!  We did have a great time making it and eating it.

Stove Top Cobbler

One bag or frozen fruit ( any will work)
1 cup of brown sugar
1/2cup of water
2 table spoon of butter
2 cup of pancake batter ( just make it like normal and set aside)
1 teaspoon of vanilla
1 teaspoon of Cinnamon
 Add your bag of frozen cherries, brown sugar,water,butter,vanilla, and cinnamon. to a quart size pot. Simmer on low until sugar mixture has caramelized for about 10 min. Now pour pancake batter on top on mixture and put a lid on it and cook for another 10 mins make sure you turn down heat of stove. The steam will cook the batter. Once the batter is firm. Its done. Serve hot or cold or with  vanilla ice cream.. its really good.

Recipe's

Its allmost time for the holidays and I have a really great recipe for Dark Chocolate Glazed Orange Macaroons
You will need 2 2/3 cups firmly packed flaked coconut
2/3 Cups of sugar
1/4 cup gold Medal all purpose flour
4 eggs
1/2 finly chopped pecans
1 tablespoon grated orange peel
2 teaspoons of vanilla
1/2 teaspoons almond extract
3oz dark baking chocolate chopped

Heat oven to 325, line cookie sheet with cooking paper.
In a large bowl, mix coconut, sugar and flour. Stir in eggs whites, pecans ,orange peel ,vanilla and almond extract. On cookie sheet drop dough by the tablespoonfuls 2 inches apart.
Bake 18 to 20 min or untill golden brown remove from cookie sheet and let cool completely.
In small resealble freezer bag place chocolate in and seal bag. Microwave on high about 1 min or untill softened. Gently squeeze bag untill chocolate is smooth; cut off tiny corner of  bag. Squeez bag to drizzle chocolate over cookie. Let stand untill set

Pork Sandwhiches

I bought a "picnic" pork roast at the store weeks ago when they were on sale.  I got it for $1.58/lb. and stocked the freezer full of them. I put it it in the crock pot before work today, still frozen.  I came home and it was perfectly shredded.  I drained the juice and added an entire bottle of BBQ sauce to it and let it simmer about 30 min longer.  I served it on kaiser rolls with fruit salad. Crowd pleaser!

chicken roast

I bought 6 lbs of some boneless, skinless, chicken breast and put them in the crock pot.  I used a really tasty rub and put in for 5 hours on high.  The first night we had it as just chicken roast with stuffing.  The next night I used the left overs and made chicken tacos, rice and beans.  Then I used the left overs in chicken taquitos.  It was a great way to have my chicken ready for my recipes and made cooking faster for the following nights.  I think I might freeze the left overs next time because my husband sort of was sick of chicken after those 3 days.

Spaghetti

Tonight was a crowd pleaser!  I had my in laws coming for dinner tonight and I wanted to make something that I knew everyone would eat, even the baby.  I served homemade Spaghetti, Green Salad, Fruit Salad, and Bread.  Now I cheated on the bread; it was store bought.  The Spaghetti sauce I made about three weeks ago and stored it in the freezer. It reheated very well.  It took about 30 min to heat and chop and serve everything.

Yummy...

Tonight my husband made dinner.  We had a full breakfast.  We never have time in the mornings to cook, so we have breakfast for dinner.  Eggs, French Toast, and Ham. It was so good.  He did great.  Our kids always love when their dad cooks... Great Job Honey!  kiss kiss

Summers ending

I was strolling through the produce section of the store feeling a little bit sad.  Summer is coming to a close and the beautiful fruits of this season will soon be gone.  Paying tribute to Summer and running short on time I have decided to make a colorful fruit salad and serve it with cottage cheese.  Its a light dinner that requires no cooking and it will be a refreshing one.  Cutting up the fruit has taken a little time but well worth it.  I love mixing melons, grapes, pineapple, strawberries, and nectarines.  If you are running short on time, buy the fruit all ready cut.  This is an easy one!

Dinner Tonight!

My days are filled with numbers at work, I want my nights to be filled with excitement! Tonight we are trying Vegetarian Burgers.  Instead of beef patties we are using huge portabello mushrooms that I bought at the farmers market last night. Grilling them for 2 minutes on each side and placing them on the roll.  I bought some forchatta rolls at the supermarket that we are using for buns. We are topping them off with lettuce, tomatoes, and a tangy mustard. We are just having fresh fruit on the side. Yummy!
